Hallot Parson
Chocolate Maker and Co-Founder

Hallot Parson is our co-founder and chocolate maker. He has a background as a chef which

drew him to start this chocolate business with Robert and Celia. During a visit to Costa Rica, Hallot met

an organic cacao farmer who was also beginning to grind his own chocolate. This visit, coupled with

independent study was the launching point for our own bean to bar chocolate production.

Hallot does everything from sourcing and roasting the beans, to cleaning and building the equipment we

use in our process. He also makes the bars and frequently wraps them, by hand!

When he is not in the workshop making chocolate or bars, he is at the retail shop taking care of our

customers.
